I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Yield: 1 serving, with 6 grams of carbohydrates, a trace of fiber, and 22 grams of protein.

 

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 tablespoon minced onion
  • 6 good, strong, black Greek olives, chopped
  • 3 eggs, beaten
  • 1/4 cup crumbled feta cheese

 

INSTRUCTIONS 

  1. Heat the oil in a heavy skillet over medium heat.
  2. Saute the onion for a minute or two, then add the olives and saute for a minute more.
  3. Pour in the eggs.
  4. Add the feta.
  5. Scramble until set.
  6. Serve.
