I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Yield: 1 serving, with 3 grams of carbohydrates, a trace of fiber, and 17 grams of protein.

 

INGREDIENTS 

  • 1 to 2 teaspoons butter
  • 1 tablespoon minced onion
  • 1/4 cup sliced mushrooms
  • 3 eggs, beaten

 

INSTRUCTIONS 

  1. Melt the butter in a heavy skillet over medium heat, and saute the onion and mushrooms for 4 to 5 minutes, or until the mushrooms are tender.
  2. Add the eggs.
  3. Scramble until set.
  4. Serve.
