Greek Cucumber Salad

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves: 2-3

 

INGREDIENTS:

  • 2-3 cucumbers, sliced
  • 2 teaspoons salt
  • 3 tbsp. lemon juice
  • 1/4 tsp. paprika
  • 1/4 tsp. white pepper
  • 1/2 clove garlic, minced
  • 4 fresh green onions, diced
  • 1 cup thick Greek Yogurt
  • 1/4 tsp. paprika

 

INSTRUCTIONS:

  1. Slice the cucumbers thinly and place them in a bowl. Sprinkle with salt and mix well. Set aside for one hour to allow the cucumbers to release their liquid.
  2. In a separate bowl, mix together the lemon juice, water, minced garlic, paprika, and white pepper. Set the mixture aside.
  3. After one hour, squeeze the liquid from the cucumber slices a few at a time, and place the drained slices back into the bowl. Discard the liquid.
  4. Pour the prepared lemon juice mixture over the cucumber slices in the bowl.
  5. Add the diced green onions and Greek yogurt to the bowl. Mix all the ingredients together until well combined.
  6. Sprinkle additional paprika or dill over the top for added flavor.
  7. Chill the cucumber salad in the refrigerator for 1-2 hours to let the flavors meld together.
  8. Serve the chilled cucumber salad as a refreshing side dish for your meals.

VARIATIONS OF CUCUMBER SALAD:

  2. Asian Cucumber Salad: Replace the lemon juice with rice vinegar and add sliced red bell peppers, shredded carrots, and chopped scallions. Toss with a dressing made of soy sauce, sesame oil, honey, and a dash of Sriracha for a flavorful Asian-inspired cucumber salad.
