INGREDIENTS AND INSTRUCTIONS

METHOD 1:

  1. Select young tender chickens and disjoint.
  2. Wash carefully and let stand overnight in the refrigerator.
  3. Drain chicken but do not wipe dry.
  4. Season with salt and white pepper, dredge well with flour.
  5. Fry in deep Crisco until browned (around 60 seconds for a crumb of bread).
  6. Cooking time: 10 to 12 minutes.
  7. Drain and place on a hot platter garnished with parsley and rice croquettes.

 

METHOD 2:

  1. Make batter with flour, salt, white pepper, water, beaten eggs, and melted Crisco.
  2. Have hot Crisco (60 seconds to brown bread crumb).
  3. Drain chicken but do not dry.
  4. Dip each joint in batter.
  5. Fry in Crisco until golden brown (10 to 12 minutes).
  6. Serve on a folded napkin garnished with parsley.

 

METHOD 3:

  1. Drain chicken but do not wipe dry.
  2. Season with salt and white pepper, dredge well with flour.
  3. Put Crisco in frying pan, place chicken, cover, and steam for 10 minutes.
  4. Uncover and brown chicken, turning frequently.
  5. Serve on hot platter, garnished with parsley, and serve with cream gravy.

 

METHOD 4:

  1. Select medium-sized chickens, wash well, and cut into pieces.
  2. Season chicken.
  3. Mix cornmeal, flour, salt, and black pepper.
  4. Dip each piece in mixture.
  5. Fry in hot Crisco for 12 minutes.
  6. Serve with cornmeal batter bread.

 

METHOD 5:

  • Wash young chicken, cut into pieces, dust with salt, pepper, and flour.
  • Fry in hot Crisco for 12 minutes.
  • Drain and place on hot platter.
  • Pour 1/2 pint hot sweet cream over the chicken.
  • Sprinkle with chopped hot roasted peanuts, salt, and pepper.
