INGREDIENTS

For Chicken:

  • 1 tender chicken, cut into neat joints
  • Salt and pepper to taste
  • 1 clove garlic
  • 1 seeded green pepper
  • 2 large tomatoes
  • 5 tablespoonfuls Crisco (shortening)

 

For Croquettes:

  • 2 tablespoonfuls Crisco (shortening)
  • 1 can or 14 ears of corn
  • 2 tablespoonfuls flour
  • 2 cupfuls milk
  • 1/2 teaspoonful sugar
  • Pepper and salt to taste
  • 1 egg
  • Breadcrumbs

 

INSTRUCTIONS

For Chicken:

  1. Draw, wash, and thoroughly dry the chicken joints.
  2. Sprinkle salt and pepper over the chicken pieces.
  3. In a frying pan, heat 5 tablespoonfuls of Crisco.
  4. Add a clove of garlic and the seeded green pepper, both cut into small pieces.
  5. Once the garlic turns brown, remove it from the pan.
  6. Place the seasoned chicken in the pan and fry until it turns golden brown.
  7. Cover the pan closely and allow the chicken to simmer until fully cooked.
  8. A short while before covering the chicken, add the peeled and diced tomatoes.

 

For Croquettes:

  1. Drain the liquid from the can of corn or grate the kernels from the ears of corn, then finely chop them.
  2. In a pan, blend 2 tablespoonfuls of Crisco and flour over the heat.
  3. Gradually add the milk while stirring, bringing the mixture to a boil.
  4. Cook for approximately five minutes, stirring constantly.
  5. Add sugar, pepper, salt, and the chopped corn to the mixture.
  6. Cook for an additional five minutes and then allow the mixture to cool.
  7. Once cooled, shape the mixture into neat croquettes using floured hands.
  8. Lightly brush the croquettes with beaten egg and coat them with breadcrumbs.
  9. Fry the croquettes in hot Crisco until they turn a golden brown, then drain them.

 

To Serve:

  1. Place the fried chicken on a hot platter.
  2. Garnish the platter with the prepared corn croquettes.
  3. Serve the Fried Chicken Mexican Style hot and enjoy the harmonious blend of flavors.
