  • 1 cup (226g) unsalted butter, cut into small pieces
  • 8 ounces (227g) bittersweet or semisweet chocolate, chopped
  • 1 1/4 cups (250g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 5 large eggs, at room temperature

 

FOR SERVING

  • Whipped cream or vanilla ice cream
  • Fresh berries or a dusting of cocoa powder (optional)

 

INSTRUCTIONS 

  1. Preheat your oven to 325°F (165°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a heatproof bowl set over a pot of simmering water, melt the butter and chopped chocolate together, stirring until smooth and well combined. Remove from heat and let it cool slightly.
  3. Stir in the granulated sugar, brown sugar, salt, and vanilla extract into the chocolate mixture until fully incorporated.
  4. Add the eggs one at a time, beating well after each addition. The batter should be smooth and glossy.
  5. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for about 30-35 minutes, or until the cake is set and a toothpick inserted into the center comes out with a few moist crumbs.
  7. Remove the cake from the oven and let it cool in the pan for about 15 minutes.
  8. Gently run a knife around the edges of the cake to loosen it from the pan. Carefully invert the cake onto a serving plate and peel off the parchment paper.
  9. Let the cake cool completely before serving.
