Flax and Blueberry Vanilla Overnight Oats

INGREDIENTS:

  • 1/2 cup oats
  • 1/3 cup water
  • 1/4 cup low-fat yogurt
  • 1/2 tsp. ground vanilla bean
  • 1 tbsp. flax seeds meal
  • A pinch of salt
  • Blueberries, almonds, blackberries, raw honey for topping

 

INSTRUCTIONS:

  1. In the evening, add the oats, water, low-fat yogurt, ground vanilla bean, flax seeds meal, and a pinch of salt to a bowl.
  2. Stir the ingredients well to ensure they are thoroughly combined.
  3. Cover the bowl and refrigerate it overnight to allow the flavors to meld and the oats to soften.
  4. In the morning, give the overnight oats a good stir. You’ll notice that the mixture has thickened and become creamy.
  5. Top your delicious overnight oats with fresh blueberries, almonds, blackberries, and a drizzle of raw honey or any other toppings of your choice.
  6. Enjoy your delightful and ready-to-eat breakfast!

Here are some variations you can try for this overnight oats recipe:

  1. Banana Nut: Add sliced bananas and chopped walnuts to the overnight oats. Sprinkle some cinnamon on top for extra flavor.
  2. Mixed Berry Delight: Use a mix of fresh strawberries, raspberries, and blueberries as your toppings. You can also add a teaspoon of chia seeds for added nutrition.
  3. Chocolate Peanut Butter: Mix in a tablespoon of cocoa powder with the oats before refrigerating. Top with peanut butter and a drizzle of honey or maple syrup.
  4. Tropical Twist: Add diced pineapple, mango, and toasted coconut flakes to the oats. You can also sprinkle some macadamia nuts on top.
  5. Apple Cinnamon: Mix in some grated apple and a dash of ground cinnamon with the oats. Top with a few raisins and a sprinkle of chopped almonds.

  10. Mocha Madness: Mix in a teaspoon of instant coffee or coffee extract with the oats. Add some dark chocolate chips on top for a delightful mocha flavor.
  11. Raspberry Almond: Stir in fresh or frozen raspberries and a drop of almond extract with the oats. Top with sliced almonds and a few more raspberries.
  12. Carrot Cake: Mix in shredded carrots, chopped walnuts, and a dash of ground cinnamon and nutmeg with the oats. Top with a dollop of Greek yogurt and a sprinkle of cinnamon.
  13. Coconut Mango: Add diced mango and shredded coconut to the oats. Top with a few more mango cubes and a sprinkle of toasted coconut.
