INGREDIENTS:

  • 6 bacon slices
  • 6 bread slices
  • 1 scallion, chopped
  • 3 tablespoons green bell pepper, seeded and chopped
  • 6 eggs
  • 2 tablespoons low-fat mayonnaise

 

INSTRUCTIONS:

  1. Preheat the Air Fryer: Preheat the Air fryer to 375°F (190°C) and grease a 6-cup muffin tin with cooking spray.
  2. Prepare Bacon and Bread: Place each bacon slice in a prepared muffin cup. Cut the bread slices with a round cookie cutter to fit over the bacon slices.
  3. Add Toppings: Top each bread slice with chopped bell pepper, scallion, and a dollop of low-fat mayonnaise, distributing them evenly among the muffin cups.
  4. Add Eggs: Carefully crack one egg into each muffin cup over the toppings.
  5. Cook in Air Fryer: Place the muffin tin in the Air fryer and cook for about 15 minutes, or until the eggs are cooked to your desired level of doneness.
  6. Serve: Carefully remove the muffin tin from the Air fryer. Use a butter knife to gently loosen the egg cups from the sides of the muffin tin. Dish out the egg cups and serve them warm.

Here are a few variations of the bacon and egg muffin cup recipe:

  1. Spinach and Feta Bacon Egg Cups:
    • Add a handful of fresh spinach leaves on top of the bacon.
    • Sprinkle crumbled feta cheese over the spinach.
    • Top with the egg and bake as directed.
  2. Mushroom and Swiss Bacon Egg Cups:
    • Sauté sliced mushrooms in a pan until softened.
    • Place sautéed mushrooms on top of the bacon.
    • Add a slice of Swiss cheese over the mushrooms.
    • Crack the egg over the cheese and bake as directed.
  3. Sausage and Cheddar Bacon Egg Cups:
    • Cook and crumble breakfast sausage.
    • Place the cooked sausage on top of the bacon.
    • Sprinkle shredded cheddar cheese over the sausage.
    • Crack the egg over the cheese and bake as directed.
  4. Veggie Delight Bacon Egg Cups:
    • Skip the bacon and use a slice of roasted bell pepper as the base.
    • Add chopped tomatoes, onions, and your choice of veggies.
    • Crack the egg over the veggies and bake as directed.
  5. Mexican-Style Bacon Egg Cups:
    • Place a slice of cooked bacon at the bottom of the muffin cup.
    • Add a spoonful of salsa and a sprinkle of shredded Mexican cheese blend.
    • Crack the egg over the cheese and bake as directed.
    • Top with chopped cilantro and a dollop of sour cream before serving.
  6. Ham and Swiss Bacon Egg Cups:
    • Place a slice of cooked ham on top of the bacon.
    • Add a slice of Swiss cheese over the ham.
    • Crack the egg over the cheese and bake as directed.
  7. Greek-Inspired Bacon Egg Cups:
    • Place a slice of cooked bacon in the muffin cup.
    • Add chopped Kalamata olives, diced tomatoes, and crumbled feta cheese.
    • Crack the egg over the toppings and bake as directed.
    • Garnish with fresh oregano or parsley before serving.
  8. Tex-Mex Bacon Egg Cups:
    • Place a slice of cooked bacon in the muffin cup.
    • Top with a spoonful of black beans, corn kernels, and diced jalapenos.
    • Crack the egg over the toppings and bake as directed.
    • Serve with a drizzle of hot sauce and a sprinkle of chopped green onions.
