Everton Taffy takes its name from the English town of Everton, known for its toffee production. Toffee and taffy share a similar lineage, both born from the art of sugar confectionery. INGREDIENTS

  • 1 gill (1/2 cup) water
  • 2 cupfuls brown sugar
  • 4 tablespoonfuls Crisco (or any vegetable shortening)
  • 1 teaspoonful vanilla extract
  • Pinch of cream of tartar
  • 1/4 teaspoonful salt

 

INSTRUCTIONS

  1. In a saucepan, combine the brown sugar and water.
  2. Stir the mixture occasionally over medium heat until it comes to a boil.
  3. Once boiling, add the pinch of cream of tartar. This ingredient helps prevent crystallization in the taffy.
  4. Cover the saucepan and allow the mixture to boil for about five minutes.
  5. Add the Crisco and salt to the boiling mixture, stirring to incorporate the ingredients.
  6. Continue to boil the mixture until it reaches the desired stage of taffy-making, which is when it will snap or reach a temperature of 300°F (148.9°C) on a candy thermometer.
  7. Remove the saucepan from the heat and add the vanilla extract, infusing the taffy with a delightful aroma.
  8. Grease a tin or pan with Crisco to prevent sticking.
  9. Pour the taffy mixture into the Criscoed tin.
  10. Allow the taffy to cool partially, then use a knife to mark it into squares or pieces. The taffy should still be pliable at this point.
  11. Allow the taffy to cool completely and harden.
  12. Once the taffy is completely cooled, break it up along the marked lines.
  13. Wrap each piece of taffy in waxed paper, preserving its freshness and making it easy to handle.
