  • 1 carrot, peeled and diced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt and black pepper to taste
  • Chopped fresh cilantro for garnish
  • Sour cream or Greek yogurt for serving (optional)

 

INSTRUCTIONS

  5. Using an immersion blender, carefully blend the soup until it reaches a smooth and creamy consistency. Alternatively, let the soup cool slightly and blend it in batches using a regular blender.
