  • 4 walleye fillets
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 large eggs, beaten
  • 1 cup breadcrumbs or cornmeal
  • Vegetable oil, for frying
  • Lemon wedges, for serving

 

INSTRUCTIONS

  1. In a shallow dish, combine the flour, paprika, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well to evenly distribute the seasonings.
  2. Dip each walleye fillet into the seasoned flour mixture, coating it thoroughly on all sides. Shake off any excess flour.
  3. In a separate shallow dish, place the beaten eggs.
  4. Dip each floured fillet into the beaten eggs, ensuring it is fully coated.
  5. In another shallow dish, spread out the breadcrumbs or cornmeal.
  6. Press each egg-coated fillet into the breadcrumbs or cornmeal, ensuring it is well covered on all sides. Gently pat the coating onto the fish to help it adhere.
  7. Place the coated fillets on a baking sheet or wire rack and let them rest for about 10 minutes to allow the coating to set.
  8. In a large skillet, heat vegetable oil over medium heat. The oil should be hot enough for frying but not smoking.
  9. Carefully add the coated walleye fillets to the hot oil, cooking them in batches if necessary to avoid overcrowding the skillet. Fry for approximately 3-4 minutes on each side, or until the coating is golden brown and the fish is cooked through. Adjust cooking time based on the thickness of the fillets.
  10. Once cooked, transfer the Crunchy-Coated Walleye fillets to a paper towel-lined plate to absorb any excess oil.
