INGREDIENTS

  • 3-4 pounds beef chuck roast
  • 2 tablespoons vegetable oil
  • Salt and black pepper, to taste
  • 2 tablespoons finely ground coffee (preferably dark roast)
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 cup beef broth
  • 1 cup brewed coffee (strongly brewed)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 sprigs fresh rosemary
  • 4-5 carrots, peeled and cut into chunks
  • 4-5 potatoes, peeled and cut into chunks

 

INSTRUCTIONS

  1. Preheat your oven to 325°F (165°C).
  2. Season the beef chuck roast generously with salt and black pepper on all sides.
  3. In a large Dutch oven or oven-safe pot, heat the vegetable oil over medium-high heat. Once hot, add the seasoned beef roast and sear it on all sides until browned. This helps seal in the juices and enhances the flavor.
  4. Remove the seared roast from the pot and set it aside momentarily.
  5. In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic becomes fragrant.
  6. Add the finely ground coffee to the pot and stir well to combine with the onion and garlic mixture.
  7. Pour in the beef broth, brewed coffee, Worcestershire sauce, and Dijon mustard. Stir to combine, scraping any browned bits from the bottom of the pot.
  8. Return the seared beef roast to the pot, along with the fresh rosemary sprigs.
  9. Cover the pot with a tight-fitting lid and transfer it to the preheated oven. Allow the roast to cook for approximately 2.5 to 3 hours, or until the beef is fork-tender and easily pulls apart.
  10. Around the last hour of cooking, add the carrot and potato chunks to the pot, arranging them around the beef.
  11. Once the beef is tender and the vegetables are cooked through, remove the pot from the oven.
  12. Carefully transfer the beef roast to a cutting board and let it rest for a few minutes before slicing.
  13. Serve the sliced Coffee Beef Pot Roast with the cooked vegetables, spooning some of the flavorful cooking liquid over the top.
