Ingredients:

  • 1 pre-made 9-inch pie crust
  • 15-oz container of ricotta cheese
  • 8-oz package of cream cheese, at room temperature
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • Whipped cream, for serving (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Place the pie crust in a 9-inch pie dish, crimping the edges as desired. Prick the bottom of the crust all over with a fork, then bake for 10-12 minutes, or until lightly golden brown. Set aside to cool.
  2. In a large bowl, beat the ricotta cheese and cream cheese together until smooth. Add in the sugar, eggs, and vanilla extract and beat until well combined.
  3. Stir in the mini chocolate chips, reserving a few for topping the pie.
  4. Pour the filling into the cooled pie crust, smoothing the top with a spatula. Sprinkle the reserved mini chocolate chips over the top of the filling.
  5. Bake the pie for 35-40 minutes, or until the edges are set but the center is still slightly jiggly.
  6. Remove the pie from the oven and let it cool to room temperature before serving. Once cool, chill the pie in the refrigerator for at least 2 hours before serving.
  7. When ready to serve, top the pie with whipped cream, if desired.
