INGREDIENTS

  • 1 pound process cheese (Velveeta), cubed
  • ½ cup chunky-style salsa
  • 1 can (4 ounces) chopped green chilies
  • 1 jar (4 ounces) diced pimientos, drained
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ⅛ teaspoon ground cumin
  • ⅛ teaspoon crushed red pepper flakes
  • Tortilla chips

 

INSTRUCTIONS

  1. In a microwave-safe bowl, combine the cubed process cheese (Velveeta), chunky-style salsa, chopped green chilies, diced pimientos, garlic powder, cayenne pepper, ground cumin, and crushed red pepper flakes.
  2. Cover the bowl and microwave on high for 6-7 minutes, or until the cheese is completely melted, stirring occasionally to ensure even melting.
  3. Once the cheese has melted and the ingredients are well combined, give the mixture a final stir to ensure a smooth and creamy consistency.
  4. Transfer the Chili con Queso to a serving bowl.
  5. Serve the Chili con Queso hot, accompanied by tortilla chips for dipping.
  6. The tortilla chips provide a satisfying crunch and serve as the perfect vessel for scooping up the cheesy goodness.
