- INGREDIENTS:
- 1 to 1 1/2 lbs chicken tenders, cubed (or use boneless chicken breasts)
- 2 medium onions, coarsely chopped
- 1 medium (or 2 small) zucchini, quartered and sliced 1/2-inch thick
- 1 green bell pepper, coarsely chopped
- 2 to 3 cloves garlic, chopped or thinly sliced
- 1 can (28 oz) crushed tomatoes
- 1 can (15 oz) diced tomatoes
- 1 package country gravy mix (or chicken gravy mix)
- 1/2 teaspoon dry sweet basil
- 1 teaspoon dry leaf oregano
- PREPARATION:
- Combine all ingredients in the slow cooker/Crock Pot (3 1/2-quart or larger).
- Cover and cook on low for 6 to 9 hours.
- Serve over hot cooked pasta or as a sauce for lasagna.
- Serves 6 to 8.
