Chestnut Dressing pays homage to the rich culinary heritage of the Northeastern United States, where chestnuts were once abundant. However, in the early 20th century, a devastating blight wiped out a significant portion of American chestnut trees, greatly impacting the availability of this cherished ingredient. Roasting chestnuts on the streets of Manhattan during winter was a beloved tradition, but changing tastes and rising prices have made it less common in recent times.

MAKES: 18 SERVINGS (½ CUP EACH)

 

INGREDIENTS

  • 4 celery ribs, chopped
  • 1 large onion, chopped
  • 1½ cups butter, cubed
  • 3 cups chestnuts, shelled and coarsely chopped
  • 3 tablespoons Italian seasoning
  • 10 slices Italian bread (¾ inch thick), cubed

 

INSTRUCTIONS

  1. In a large skillet, cook and stir celery and onion in butter until tender. Add the chopped chestnuts and Italian seasoning. Bring the mixture to a boil, then reduce the heat and let it simmer, uncovered, for 10 minutes. Stir in the cubed Italian bread, ensuring it is well-coated with the flavorful mixture.
  2. Transfer the dressing mixture to an ungreased 13×9-inch baking dish. Bake, uncovered, at 350°F for 20-25 minutes, or until the top turns golden brown and crispy.
