INGREDIENTS

  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh parsley
  • 2 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

 

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C). Grease a baking dish or casserole dish with butter or cooking spray.
  2. In a medium saucepan, bring the water or chicken broth to a boil. Add the rice, reduce the heat to low, cover the saucepan, and let the rice simmer for about 15-20 minutes, or until it is cooked and fluffy.
  3. In a large mixing bowl, combine the cooked rice, shredded cheddar cheese, grated Parmesan cheese, sour cream, mayonnaise, chopped fresh parsley, green onions, garlic powder, onion powder, salt, and black pepper. Stir well until all the ingredients are evenly incorporated.
  4. Transfer the rice mixture to the greased baking dish, spreading it out evenly.
  5. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  6. After 25 minutes, remove the foil and continue baking for an additional 10-15 minutes, or until the top is golden and the cheese is melted and bubbly.
  7. Remove the Cheddar Rice Casserole from the oven and let it cool for a few minutes before serving.
  8. Serve the Cheddar Rice Casserole as a side dish alongside roasted meats, grilled vegetables, or any main course of your choice.
