Caramelized-Onion Pork is a delicious and flavorful dish that combines tender pork tenderloin with sweet and savory caramelized onions. INGREDIENTS

  • 1 large sweet onion, thinly sliced
  • 1 teaspoon sugar
  • 2 teaspoons olive oil
  • 1 pork tenderloin (1 pound)
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper

 

INSTRUCTIONS

  1. In a large skillet, cook the onion and sugar in olive oil over medium-low heat until the onion is tender and golden brown, which usually takes about 30 minutes. Stir occasionally to prevent sticking and ensure even caramelization.
  2. Preheat the oven to 350°F (175°C) and coat a 13×9-inch baking dish with cooking spray.
  3. Place the pork tenderloin in the prepared baking dish and season it with salt and pepper.
  4. Top the pork tenderloin with the caramelized onion mixture, spreading it evenly over the surface.
  5. Bake the dish, uncovered, in the preheated oven for 35-40 minutes or until a meat thermometer inserted into the thickest part of the tenderloin reads 145°F (63°C). This will ensure that the pork is cooked to a safe internal temperature while remaining juicy and tender.
  6. Once cooked, remove the dish from the oven and let the pork tenderloin rest for 5 minutes before slicing. This allows the juices to redistribute throughout the meat, resulting in a more flavorful and succulent final dish.

  • Plated with Roasted Vegetables: Serve the sliced Caramelized-Onion Pork on a plate alongside a medley of roasted vegetables.
