Serves 4
INGREDIENTS
- 1 garlic clove, thinly sliced
- 3 tablespoons extra-virgin olive oil
- 2 cups bite-size pieces broccoli rabe
- About 2 tablespoons water
- 8 large eggs
- Salt and freshly ground pepper
- 4 ounces smoked mozzarella, sliced
INSTRUCTIONS
- Cook the garlic in the oil in a 10-inch nonstick skillet over medium heat until golden, about 1 minute.
- Add the broccoli rabe and the water. Cook, stirring, until the broccoli rabe is tender when pierced with a knife, about 8 minutes, adding a bit more water if it seems dry.
- Whisk together the eggs and salt and pepper to taste in a bowl.
- Reduce the heat under the skillet to medium-low. Pour the egg mixture into the pan.
- Spread the broccoli rabe evenly in the pan and top with the mozzarella slices.
- Cook, lifting the edges from time to time to allow the uncooked egg to reach the surface of the hot pan, until the frittata is partly set and lightly browned on the bottom, 8 to 10 minutes.
- Slide the frittata onto a plate, brown side down, then invert the skillet over the plate and quickly flip the plate and skillet so that the brown side is up.
- Cook until just set in the center, about 5 minutes more. Alternatively, if you prefer not to flip the frittata, use a flameproof skillet and slide it under a hot broiler for 3 to 5 minutes, or until the eggs are just set. (If the skillet has a plastic handle, wrap it in foil to protect it.)
- Slide the frittata onto a serving dish and cut into wedges.
- Serve hot or at room temperature.
