INGREDIENTS
- 6 scallions, thinly sliced
- 3 tablespoons extra-virgin olive oil
- 1½ cups fresh or partially thawed frozen peas
- ½ cup chopped ham
- 8 large eggs
- ¼ cup chopped fresh parsley
- ¼ cup freshly grated Parmigiano-Reggiano
- Salt and freshly ground pepper
INSTRUCTIONS
- In a 10-inch skillet, cook the scallions in the olive oil over medium heat until softened, about 2 minutes.
- Add the peas and ham to the skillet and cook for an additional 2 minutes.
- Meanwhile, whisk together the eggs, parsley, cheese, and salt and pepper to taste in a bowl.
- Reduce the heat under the skillet to medium-low and pour the egg mixture into the pan.
- Cook the frittata, lifting the edges from time to time to allow the uncooked egg to reach the surface of the hot pan, until it is partly set and lightly browned on the bottom, approximately 8 to 10 minutes.
- Slide the frittata onto a plate, with the brown side facing down, then invert the skillet over the plate and quickly flip the plate and skillet so that the brown side is facing up.
- Continue cooking the frittata until it is just set in the center, approximately 5 minutes more. Alternatively, if you prefer not to flip the frittata, use a flameproof skillet and slide it under a hot broiler for 3 to 5 minutes, or until the eggs are just set and the top is lightly browned. (If the skillet has a plastic handle, wrap it in foil to protect it.)
- Slide the frittata onto a serving dish and cut it into wedges.
- Serve the frittata hot or at room temperature.
