I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS:

  • 1 pound elbow macaroni, cooked
  • 2 medium carrots, chopped
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • 2 teaspoons Worcestershire sauce
  • ¼ cup all-purpose flour
  • 2 teaspoons ground mustard
  • 2 teaspoons garlic powder
  • ¼ teaspoon cayenne pepper
  • 5 tablespoons unsalted butter
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces fontina cheese, shredded
  • Salt and pepper

 

INSTRUCTIONS:

  1. Fill a medium pot with water and bring it to a boil. Add the chopped carrots, cover, reduce the heat to medium, and simmer for about 5 minutes or until the carrots are tender. Drain the carrots and transfer them to a blender.
  2. To the blender with the carrots, add the whole milk, heavy cream, and Worcestershire sauce. Blend the mixture until smooth and well combined.
  3. In a small bowl, mix the all-purpose flour, ground mustard, garlic powder, and cayenne pepper.
  4. In a large saucepan over medium-high heat, melt the butter. Once the butter is melted, gradually whisk in the spiced flour mixture, stirring constantly to create a roux. Continue whisking until the butter and flour are fully combined.
  5. Slowly whisk in the blended carrot and milk mixture, ensuring that the roux and the liquid blend together smoothly.
  6. Gradually add the shredded sharp cheddar cheese and fontina cheese in small batches, stirring until the cheese is melted and the sauce is creamy.
  7. Season the cheese sauce with salt and pepper to taste.
  8. Add the cooked elbow macaroni to the cheese sauce and stir well to ensure that the macaroni is evenly coated with the creamy cheese mixture.
  9. Serve the delicious macaroni and cheese while it’s warm and enjoy your homemade comfort food!
