INGREDIENTS:

  • 2 teaspoons butter, melted
  • 1 medium onion, chopped
  • ½ of green bell pepper, seeded and chopped
  • 1½ pound russet potatoes, peeled and cubed
  • 5 eggs, beaten
  • ½ teaspoon dried thyme, crushed
  • ½ teaspoon dried savory, crushed
  • Salt and black pepper, to taste

 

INSTRUCTIONS:

  1. Preheat and Grease: Preheat the Air fryer to 390°F (200°C) and grease an Air fryer pan with the melted butter.
  2. Sauté Onion and Bell Pepper: Place the chopped onion and green bell pepper in the greased Air fryer pan. Cook for about 5 minutes, stirring occasionally, until the vegetables are slightly softened.
  3. Add Potatoes and Seasoning: Add the peeled and cubed russet potatoes to the pan. Sprinkle with dried thyme, dried savory, salt, and black pepper. Stir to combine all the ingredients.
  4. Cook Potatoes: Cook the potato mixture in the Air fryer for about 30 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside. Shake or stir the mixture occasionally during cooking to ensure even browning.
  5. Prepare Eggs: While the potatoes are cooking, heat a greased skillet over medium heat. Pour in the beaten eggs and cook for about 1 minute on each side, just until set. Remove the cooked egg from the skillet and cut it into small pieces.
  6. Combine Eggs and Potatoes: Once the potatoes are cooked, transfer the cooked egg pieces into the Air fryer pan with the potatoes. Gently mix the eggs and potatoes together.
  7. Finish Cooking: Cook the combined mixture for about 5 more minutes in the Air fryer, allowing the flavors to meld and the egg pieces to warm.
  8. Serve: Dish out the cooked egg and potato mixture and serve warm.
