INGREDIENTS:

  • 2 large eggs
  • 8 tablespoons pumpkin puree
  • 6 tablespoons banana flour
  • 4 tablespoons plain Greek yogurt
  • 6 tablespoons oats
  • 4 tablespoons honey
  • 2 tablespoons vanilla essence
  • Pinch of ground nutmeg

 

INSTRUCTIONS:

  1. Preheat the Air fryer to 360°F and grease a loaf pan.
  2. In a bowl, combine the pumpkin puree, banana flour, plain Greek yogurt, honey, vanilla essence, and a pinch of ground nutmeg.
  3. Using a hand mixer, beat the mixture until it becomes smooth and well combined.
  4. Add the oats to the mixture and mix again until the oats are evenly incorporated.
  5. Transfer the prepared mixture into the greased loaf pan, spreading it evenly.
  6. Place the loaf pan in the preheated Air fryer.
  7. Cook the bread in the Air fryer for about 15 minutes or until it’s cooked through and the top is golden brown.
  8. Once cooked, carefully remove the loaf pan from the Air fryer and place it onto a wire rack to cool.
  9. Once the bread has cooled, cut it into desired size slices.
  10. Serve the pumpkin banana bread slices and enjoy!
