COOKING FOR BABY GREEN BEANS

About

Brenda Gantt

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Tender green beans cook up quickly in the pressure cooker, and they are easily pureed in the food processor or blender.

MAKES ABOUT 2 CUPS

INGREDIENST

  • 1 cup filtered water
  • 2 cups green beans, stemmed and cut into 1-inch lengths (about 1 pound)

INSTRUCTIONS

  1. Pour the water into the pressure cooker. Arrange the trivet and steamer basket in the bottom. Arrange the beans in the basket. Lock the lid in place. Cook at high pressure for 3 minutes.
  2. Release the pressure naturally and remove the lid, tilting the pot away from you to avoid the escaping steam. Transfer the beans to a food processor or blender. Puree, adding a bit of the cooking liquid to thin the puree.
  3. Cool the puree completely. Store in airtight containers in the refrigerator for up to 2 days or in the freezer for up to 2 months.
