Pancake Mix-in-a-Jar

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

This easy mix is the perfect gift for the pancake-lover in your life. It’s also great to have on hand for when you want to whip up a quick batch of pancakes.

Makes about 3 cups pancake mix; enough for about twenty-four 4-inch pancakes

Prep time: 5 minutes
Cooking time: about 4 minutes per batch

 

INGREDIENTS

  • 2 ½ cups all-purpose flour
  • ⅓ cup icing sugar, sifted
  • 3 Tbsp baking powder
  • 2 tsp baking soda
  • 1 tsp fine sea salt

 

INSTRUCTIONS

  1. In a 4-cup Mason jar, layer all the ingredients in the order listed.
  2. Seal the jar, then write the following instructions on a label and tie it around the jar.
  3. Pour this mix in a large mixing bowl.
  4. Whisk in 1 ¼ cups of milk, 3 eggs and 5 tablespoonfuls of melted butter.
  5. Heat a griddle or large skillet over medium heat.
  6. Drop the batter onto the griddle, using ¼ cup of the batter per pancake.
  7. Cook until bubbles appear on the surface of the pancakes, 1 to 2 minutes.
  8. Flip the pancakes, then cook for 1 to 2 minutes.
  9. Enjoy.
