Vegan Strawberry Ice Cream

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

There are few things better than sweet summer strawberries. This will give you
that taste of summer you are looking for, or cool you off on a hot day.

 YIELD: 1 QUART

INGREDIENTS 

  • 2 cups coconut milk
  • 1 pound fresh strawberries, hulled and halved
  • ⅓ cup agave nectar
  • 2 teaspoons vanilla extract
  • Pinch salt

PREPARATION

  1. Blend everything together in a blender or food processor until completely liquefied. Refrigerate 4 hours to overnight.
  2. Add to ice cream maker and follow manufacturer’s instructions for freezing.

NOTE: This dairy-free and vegan-friendly strawberry coconut ice cream is a refreshing and healthy alternative to traditional ice cream.
