I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS: 

  • 3 to 4 cups cooked chicken or turkey, diced
  • 1/2 cup green pepper, finely chopped
  • 1/4 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1 jar (2 ounces) chopped pimento (or chopped red bell pepper)
  • 1 can (4 ounces) sliced mushrooms, drained
  • 2 cans (10 3/4 ounces) condensed cream of chicken soup (or cream of mushroom)
  •  1 pkg. (10 oz.) frozen peas, about 1 1/2 cups

PREPARATION:

  1. Combine all ingredients except peas in the slow cooker. Stir gently to mix.
  2. Cover and cook on low 5 to 7 hours.
  3. Turn to high and add peas about 45 minutes before serving.
  4. Serves 4.
