Marble cake is a classic and visually striking dessert known for its distinctive swirls of light and dark batter. The marbleizing technique allowed bakers to create beautiful patterns in their cakes using basic ingredients like vanilla and chocolate batter. INGREDIENTS

  • 2 cupfuls sugar
  • 1 cupful Crisco
  • 2 tablespoonfuls molasses
  • 2 tablespoonfuls melted chocolate
  • 3-1/2 cupfuls flour
  • 4 eggs
  • 1 cupful milk
  • 3 teaspoonfuls baking powder
  • 1 teaspoonful powdered cinnamon
  • 1/2 teaspoonful grated nutmeg
  • 1/2 teaspoonful powdered allspice
  • 1 teaspoonful salt

 

INSTRUCTIONS

  1. Creaming Crisco and Sugar: In a mixing bowl, cream Crisco and gradually add sugar. Beat until the mixture is light and fluffy.
  2. Adding Eggs and Dry Ingredients: Add the yolks of eggs, which should be beaten until thick. Sift together flour, baking powder, and salt, and gradually incorporate them into the mixture.
  3. Adding Milk: Pour in the milk and mix well until a smooth batter forms.
  4. Beating Egg Whites: In a separate bowl, beat the egg whites until they form stiff peaks.
  5. Marbling Batter: Divide the batter into three parts. To one-third of the batter, add the spices (cinnamon, nutmeg, allspice), creating a spiced batter. To another third, add molasses and melted chocolate to create the chocolate batter. Leave the remaining third as the vanilla batter.
  6. Creating Marble Pattern: In a greased cake pan, drop spoonfuls of each batter alternately, creating a checkerboard pattern. Run a spoon through the batters once or twice to create marbled lines.
  7. Baking: Bake the cake in a moderately hot oven for about one hour, or until a toothpick inserted into the center comes out clean.
