Marmalade cake is a delightful and flavorful dessert that captures the essence of citrusy goodness in every bite. Marmalade cake’s history can be traced back to the tradition of using marmalade—a preserve made from citrus fruits—as a versatile ingredient in various culinary creations. Marmalade’s popularity as a flavoring agent gave rise to the idea of incorporating it into cake recipes, creating a delightful blend of sweetness and citrus tang.

Citrus fruits like oranges, lemons, and grapefruits have been used for centuries to make marmalade. The method of preserving fruits in sugar syrup allowed people to enjoy the bright flavors of citrus even when they were out of season. As baking techniques evolved, marmalade found its way into cakes, adding a unique twist to traditional dessert recipes.

 

 

INGREDIENTS

  • 1/2 cupful sugar
  • 1/2 cupful Crisco
  • 1 cupful marmalade
  • 1-1/2 teaspoonfuls baking powder
  • 1/2 teaspoonful salt
  • 1 egg
  • 2 cupfuls flour
  • 1/2 teaspoonful powdered ginger

 

INSTRUCTIONS

  1. Preparing Dry Ingredients: In a mixing bowl, sift together the salt, flour, and baking powder. These dry ingredients will form the base of the cake.
  2. Incorporating Crisco: Rub in the Crisco using your fingertips. This technique helps distribute the fat evenly throughout the flour mixture, creating a crumbly texture.
  3. Adding Flavorful Touch: Mix in the powdered ginger, adding a warm and slightly spicy note to the cake’s flavor profile.
  4. Adding Egg: Add the well-beaten egg to the mixture. The egg will bind the ingredients together and provide moisture.
  5. Creating Dough: Knead the mixture lightly until it forms a smooth dough. Divide the dough into two pieces.
  6. Rolling Out the Dough: Roll out one of the dough pieces and use it to line a Criscoed dinner plate. This will be the base of the cake.
  7. Adding Marmalade: Spread a layer of marmalade over the rolled-out dough, ensuring an even distribution of the sweet and tangy flavors.
  8. Covering with Second Dough Piece: Roll out the second piece of dough and place it over the marmalade layer. Pinch the edges of the dough together neatly to seal the cake.
  9. Baking: Bake the assembled cake in a moderate oven for about half an hour, or until the cake is golden brown and cooked through.
  10. Serving: Once baked, the marmalade cake can be cut into pieces, resembling a pie. It can be served either hot or cold, depending on your preference.
