INGREDIENTS:

  • 4 cups all-purpose flour
  • ½ cup sugar
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 6 tablespoons (¾ stick) unsalted butter, cubed, at room temperature, plus more for greasing the pan
  • 1 cup raisins

 

 

INSTRUCTIONS:

  1. PREHEAT THE OVEN: Preheat the oven to 350 ° F.
  2. MIX DRY INGREDIENTS: Combine the flour, sugar, salt, baking powder, and baking soda in a food processor or stand mixer fitted with the paddle attachment.
  3. ADD BUTTER AND MIX: Add the cubed butter and pulse or mix on low until the mixture resembles coarse meal. Transfer the mixture to a large bowl.
  4. ADD RAISINS: Add the raisins to the large bowl and stir to combine with the dry mixture.
  5. PREPARE BUTTERMILK MIXTURE: In a small bowl, whisk the buttermilk and eggs together.
  6. COMBINE MIXTURES: Add the buttermilk mixture to the large bowl with the dry ingredients. Stir with a spatula until just combined. Note that the dough will still be wet.
  7. GREASE CAKE PAN: Grease a 9-inch cake pan with additional butter.
  8. TRANSFER DOUGH TO PAN: Place the dough in the prepared cake pan.
  9. MAKE AN X: With a sharp knife, make an X across the top of the dough.
  10. BAKE: Bake for 1 hour, until a toothpick inserted into the center comes out clean.
  11. COOL: Allow the bread to cool completely before serving.
