INGREDIENTS:
- 2-3 cucumbers, sliced
- 2 teaspoons salt
- 3 tbsp. lemon juice
- 1/4 tsp. paprika
- 1/4 tsp. white pepper
- 1/2 clove garlic, minced
- 4 fresh green onions, diced
- 1 cup thick Greek Yogurt
- 1/4 tsp. paprika
INSTRUCTIONS:
- Slice the cucumbers thinly and place them in a bowl. Sprinkle with salt and mix well. Set aside for one hour to allow the cucumbers to release their liquid.
- In a separate bowl, mix together the lemon juice, water, minced garlic, paprika, and white pepper. Set the mixture aside.
- After one hour, squeeze the liquid from the cucumber slices a few at a time, and place the drained slices back into the bowl. Discard the liquid.
- Pour the prepared lemon juice mixture over the cucumber slices in the bowl.
- Add the diced green onions and Greek yogurt to the bowl. Mix all the ingredients together until well combined.
- Sprinkle additional paprika or dill over the top for added flavor.
- Chill the cucumber salad in the refrigerator for 1-2 hours to let the flavors meld together.
