INGREDIENTS

  • ½ cup hazelnut meal
  • ¾ cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • 4 tablespoons unsalted butter, cold
  • ¼ cup heavy cream
  • 1 large egg yolk

 

DRIZZLE:

  • ⅓ cup dark chocolate chips
  • 2 teaspoons coconut oil

 

INSTRUCTIONS

  1. Preheat the oven to 400°F (200°C).
  2. In a medium bowl, whisk together the hazelnut meal, all-purpose flour, salt, baking soda, and baking powder until well combined.
  3. Dice the cold butter into small pieces and add it to the flour mixture. Use your fingers or a pastry blender to work the butter into the flour until it resembles coarse crumbs.
  4. Stir in the heavy cream and egg yolk until a soft and slightly sticky dough forms.
  5. Scoop out 12 equal-sized balls of dough and lightly roll them between your hands to form smooth balls.
  6. Place the dough balls on a baking sheet lined with parchment paper, spacing them apart to allow for spreading.
  7. Bake the cookies in the preheated oven for about 10 minutes or until they are lightly golden and set.
  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

 

DRIZZLE:

  1. In a microwave-safe bowl, heat the dark chocolate chips and coconut oil at 50% power, stirring every 20 seconds until the chocolate is melted and smooth.
  2. Drizzle the melted chocolate over the cooled cookies using a spoon, creating a decorative pattern on top.
