INGREDIENTS

COOKIES:

  • ½ cup (1 stick) unsalted butter
  • ¼ cup creamy peanut butter
  • 1 cup firmly packed light or dark brown sugar
  • 1 egg, at room temperature
  • 1 teaspoon vanilla
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

 

GANACHE:

  • 3 tablespoons corn syrup
  • 6 ounces heavy cream
  • 12 ounces dark chocolate, chopped into small pieces
  • ½ teaspoon vanilla extract

 

TOPPING:

  • Chopped peanuts
  • Toffee chips

 

INSTRUCTIONS

COOKIES:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a large bowl, cream together the unsalted butter and creamy peanut butter until fluffy, which should take around 2 minutes.
  3. With the mixer on low speed, add in the brown sugar, egg, and vanilla until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  5. Add the flour mixture to the peanut butter mixture and stir until fully combined. To prevent the dough from drying out, cover it with plastic wrap directly on top and chill for 2 hours.
  6. On a floured surface, roll out the chilled dough and cut it into desired shapes, making sure to flour the cookie cutter between cuts.
  7. Place the cut-out cookies onto a greased cookie sheet or a sheet lined with a silpat or parchment paper.
  8. Bake the cookies for about 8-10 minutes or until they are lightly browned and set. Allow them to cool on the cookie sheets for a few minutes before transferring them to a wire rack to finish cooling.

 

GANACHE:

  1. In a small saucepan, combine the corn syrup and heavy cream.
  2. Bring the mixture to a simmer and add the chopped dark chocolate. Stir until the chocolate is smooth. Remove the saucepan from heat and add the vanilla extract.

 

ASSEMBLY:

  1. Spread about 2 teaspoons of the ganache evenly over each cookie.
  2. Sprinkle the cookies with chopped peanuts, toffee chips, or a combination of both.
  3. Refrigerate the cookies in a single layer on a tray to fully set the ganache.
