The process of candying sweet potatoes involves simmering them in a syrupy mixture, typically made with brown sugar, butter, and warm spices. As the potatoes cook, they absorb the flavors of the syrup and develop a caramelized coating that enhances their natural sweetness.

INGREDIENTS

  • 4 medium-sized sweet potatoes, peeled and sliced into rounds
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup water
  • Marshmallows for topping (optional)

 

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
  2. In a saucepan, melt the butter over medium heat. Add the brown sugar, ground cinnamon, ground nutmeg, and salt. Stir until the sugar has dissolved and the mixture is well combined.
  3. Add the water to the saucepan and bring the mixture to a simmer. Let it cook for 2-3 minutes, allowing the flavors to meld together and the mixture to thicken slightly.
  4. Place the sliced sweet potatoes in the greased baking dish, arranging them in an even layer.
  5. Pour the syrup mixture over the sweet potatoes, ensuring that all the slices are coated. Use a spoon to spread the syrup evenly, if needed.
  6. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and baste the sweet potatoes with the syrup from the bottom of the dish.
  8. Return the dish to the oven, uncovered, and continue baking for an additional 15-20 minutes, or until the sweet potatoes are tender and the syrup has thickened and caramelized.
  9. If desired, remove the dish from the oven and top the sweet potatoes with marshmallows. Return the dish to the oven and broil for a few minutes until the marshmallows are golden and toasted.
  10. Remove the Candied Sweet Potatoes from the oven and let them cool for a few minutes before serving.
