INGREDIENTS

  • 6 ounces uncooked multigrain spaghetti

 

FOR SAUCE:

  • 3 tablespoons toasted sesame seeds
  • 3 tablespoons sesame oil
  • 3 tablespoons reduced-sodium soy sauce
  • 6 garlic cloves, minced
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon Sriracha Asian hot chili sauce or 1½ teaspoons hot pepper sauce
  • ½ teaspoon salt
  • ½ teaspoon pepper

 

FOR SHRIMP & VEGETABLES:

  • 2 teaspoons canola oil
  • ½ pound medium shrimp, peeled and deveined
  • 1½ cups coleslaw mix
  • ¾ cup julienned carrots
  • 1 celery rib, thinly sliced
  • 1 small sweet red pepper, julienned
  • ½ cup sliced water chestnuts
  • 2 green onions, chopped

 

INSTRUCTIONS

  1. Cook the multigrain spaghetti according to the package directions. Once cooked, drain and set aside.
  2. In a small bowl, mix together the sauce ingredients, including toasted sesame seeds, sesame oil, reduced-sodium soy sauce, minced garlic cloves, rice vinegar, honey, Sriracha Asian hot chili sauce or hot pepper sauce, salt, and pepper. Set the sauce mixture aside.
  3. In a large skillet, heat canola oil over medium-high heat. Add the peeled and deveined shrimp and stir-fry for 2-3 minutes or until the shrimp turn pink. Once cooked, remove the shrimp from the pan and set aside.
  4. In the same pan, add the sauce mixture and bring it to a boil. Reduce the heat and let it simmer uncovered for 2 minutes.
  5. Drain the cooked multigrain spaghetti and add it to the pan with the sauce. Toss the spaghetti with the sauce until well combined.
  6. Return the cooked shrimp to the pan with the spaghetti and sauce. Add the coleslaw mix, julienned carrots, thinly sliced celery rib, julienned sweet red pepper, sliced water chestnuts, and chopped green onions.
  7. Cook and toss the mixture over medium-low heat until the vegetables begin to wilt, which takes about 4 minutes.
  8. Once the vegetables are slightly wilted, remove the pan from the heat. The Spicy Sesame Shrimp & Noodle Salad is now ready to be served.
