  • 2 trout (10 to 11 ounces each)
  • 4 tablespoons plus 1½ teaspoons lemon juice, divided
  • 3 teaspoons dill weed, divided
  • 2 teaspoons lemon-pepper seasoning, divided
  • 1 small onion, chopped
  • 1 tablespoon butter
  • ½ cup minced fresh parsley
  • 2 cups soft bread crumbs

 

INSTRUCTIONS

  1. Preheat the oven to 400°F (200°C). Prepare a 13×9-inch baking dish by coating it with cooking spray.
  2. Place the trout in the baking dish, ensuring they are arranged side by side. Sprinkle 3 tablespoons of lemon juice, 1½ teaspoons of dill weed, and 1½ teaspoons of lemon-pepper seasoning inside the cavities of the fish and over the outside surface of the fish. Set the dish aside.
  3. In a nonstick skillet, sauté the chopped onion in butter until it becomes tender. Add the minced parsley, remaining dill weed, and remaining lemon-pepper seasoning to the skillet. Stir in the soft bread crumbs and heat the mixture through. Sprinkle the stuffing mixture with the remaining 1½ teaspoons of lemon juice and gently stir until the breadcrumbs are moistened.
  4. Stuff the prepared breadcrumb mixture into the cavities of the trout, evenly distributing it between the two fish.
  5. Bake the stuffed trout, uncovered, in the preheated oven for 25-30 minutes or until the fish flakes easily with a fork. The baking time may vary depending on the thickness of the fish, so check for doneness by gently testing the fish with a fork.
  6. Once cooked, carefully transfer the Stuffed Mountain Trout to serving plates or a platter, taking care not to disturb the stuffing. Serve the trout while it’s still warm, and enjoy the delicious flavors and textures.
