INGREDIENTS

  • 4 cups diced yellow summer squash
  • 1 cup diced onion
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 1 cup white vinegar
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

 

INSTRUCTIONS

  1. In a large saucepan, combine the diced yellow summer squash, onion, red bell pepper, green bell pepper, white vinegar, granulated sugar, brown sugar, mustard seeds, celery seeds, turmeric, salt, and black pepper.
  2. Place the saucepan over medium heat and bring the mixture to a boil.
  3. Reduce the heat to low and let the relish simmer for approximately 20-25 minutes, stirring occasionally, until the vegetables have softened and the flavors have melded together.
  4. Remove the saucepan from heat and let the relish cool to room temperature.
  5. Once cooled, transfer the relish to sterilized jars or containers. Make sure to leave some headspace at the top of each jar.
  6. Seal the jars tightly and refrigerate for at least 24 hours before serving. This allows the flavors to develop and intensify.
  7. The Yellow Summer Squash Relish can be stored in the refrigerator for up to two weeks.

 

NOTE:

  • If you prefer a longer shelf life, the relish can be processed in a hot water bath canner according to standard canning procedures. This will extend the shelf life to several months.
