Waffle Cones

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Making waffle cones is one of those things you simply must have the right equipment for. There are many different waffle cone machines on the market, from standard waffle to mini. A pizzelle maker works just as well.

SERVES 12

INGREDIENTS

  • 1 cup heavy cream
  • 2 teaspoons vanilla
  • 1½ cups powdered sugar
  • 1½ cups all-purpose flour
  • 1 tablespoon cornstarch

PREPARATION

  1. Whip the cream and vanilla in a medium bowl with a whisk by hand until almost soft peaks form.
  2. In a separate bowl, sift together the sugar, flour, and cornstarch.
  3. Add the sugar mixture to the cream and stir until combined.
  4. Chill the batter for 30 minutes to 1 hour.
  5. Preheat a waffle iron according to the manufacturer’s instructions.
  6. Pour the batter onto the waffle iron and cook until golden brown.
  7. While still hot, wrap each waffle around a coning tool, shape it by hand, or press it into a bowl for an alternate vessel shape.
  8. Serve and enjoy!
