Vegetarian Shepherd’s Pie is a delicious and hearty plant-based version of the classic Shepherd’s Pie. It is a comforting and satisfying dish that brings together meat crumbles, green beans, condensed tomato soup, and creamy mashed potatoes, topped with melted cheddar cheese. This vegetarian twist on the traditional recipe is perfect for those looking to enjoy a meatless yet flavorful and wholesome meal.

The Shepherd’s Pie, also known as Cottage Pie, has its roots in British cuisine and dates back to the late 1700s. The original version of Shepherd’s Pie traditionally featured minced or ground meat, such as lamb or mutton, cooked with onions and vegetables, topped with mashed potatoes, and then baked until golden and crispy.

The vegetarian adaptation of Shepherd’s Pie emerged as a response to the increasing popularity of vegetarian and plant-based diets. People sought ways to enjoy classic dishes while still adhering to their dietary preferences. This led to the creation of the Vegetarian Shepherd’s Pie, which replaces the traditional meat with meat crumbles, offering a similar texture and taste.

Over time, various variations of the Vegetarian Shepherd’s Pie have developed, incorporating different vegetables and plant-based proteins to cater to diverse tastes and dietary choices. The dish has become a staple in vegetarian and vegan households, appreciated for its warm, comforting flavors and versatility.

 

 

INGREDIENTS

  • 2 (11-oz) packages meat crumble (plant-based protein alternative)
  • 1 Tbsp. olive oil
  • Salt & pepper to taste
  • 2 (16-oz) cans green beans, drained
  • 2 (10.75 oz) cans condensed tomato soup
  • 2-3 cups mashed potatoes, instant or homemade
  • ½ cup grated cheddar cheese (use vegan cheese for a fully vegan version)

 

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C). Spray a casserole dish or a 9×13″ dish with cooking spray and set it aside.
  2. In a large skillet over medium heat, warm the olive oil, and then add the frozen meat crumble. Stir until all the larger pieces are separated and heated through.
  3. Add the drained green beans and condensed tomato soup to the skillet. Stir everything together, and season with salt and pepper if necessary. Let the mixture simmer for a few minutes to allow the flavors to meld.
  4. Pour the meat crumble and vegetable mixture into the prepared casserole dish, spreading it out evenly.
  5. Top the mixture with the mashed potatoes, spreading them in an even layer. You can use instant mashed potatoes for convenience or homemade mashed potatoes for a fresher taste.
  6. Sprinkle the grated cheddar cheese over the mashed potatoes.
  7. Place the casserole dish in the preheated oven and bake for about 30 minutes or until the dish is heated through, and the cheese on top has melted and turned golden brown.
  8. Once baked, remove the Vegetarian Shepherd’s Pie from the oven and let it sit for a few minutes before serving.
