INGREDIENTS

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Coarse salt and freshly ground pepper
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 medium white onion, thinly sliced
  • 8 ounces button mushrooms, trimmed and sliced
  • 1 1/2 pounds ground turkey
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 can (14.5 ounces) diced tomatoes
  • 3 tablespoons unsalted butter
  • 1/3 cup buttermilk
  • 1 1/2 cups grated cheddar cheese

 

INSTRUCTIONS

  1. Preheat the oven to 425 degrees F (220 degrees C). In a bowl, whisk together flour, baking powder, baking soda, and 1/4 teaspoon of salt.
  2. In a large, heavy ovenproof skillet, heat oil over medium-high heat.
  3. Add the red bell pepper, onion, and mushrooms. Cook, stirring occasionally, until the vegetables are tender, which usually takes around 8 to 10 minutes.
  4. Season the vegetables with salt and pepper. Add the ground turkey, tomato paste, and chili powder to the skillet. Cook, stirring, until the meat is no longer pink, which should take about 3 minutes. Add the diced tomatoes (with their liquid); cook until some of the liquid has reduced, about 3 minutes more. Season with salt and pepper as needed. Remove the skillet from the heat.
  5. Cut the butter into the flour mixture using a pastry cutter or two knives until the mixture resembles coarse meal. Stir in the buttermilk and grated cheddar just until incorporated.
  6. Divide the biscuit batter into 9″ pieces and place them on top of the turkey mixture in the skillet.
  7. Bake the Turkey Skillet Pie in the preheated oven until the biscuits are golden brown, approximately 20 minutes.

 

Serve the Turkey Skillet Pie hot, straight from the skillet, and enjoy a delightful and comforting meal with the goodness of turkey, vegetables, and cheesy biscuits all in one dish.
