In Indonesia, residents mix their avocados with milk, coffee, and rum to make a cold drink called alpokat. It is served as a sweet dessert, and is often served over ice cream, much like a milkshake.

INGREDIENTS
- 4 ripe bananas
- 1 cup extra-virgin coconut oil
- 2 ripe avocados, peeled and pitted
- ¾ cup unrefined sugar
- Pinch salt
- 1 tablespoon vanilla extract

PREPARATION
- Place the bananas and coconut oil in a food processor or blender and blend well.
- Add the remaining ingredients and blend well. Refrigerate for 4 hours to overnight.
- Add the mixture to an ice cream maker and follow the manufacturer’s instructions for freezing.
