Vegan Choco-Avocado Ice Cream

Avocado lends to the creaminess in this recipe, making for a strikingly rich dessert.

Avocados

In Indonesia, residents mix their avocados with milk, coffee, and rum to make a cold drink called alpokat. It is served as a sweet dessert, and is often served over ice cream, much like a milkshake.

YIELD: 1 QUART

INGREDIENTS

  • 4 ripe bananas
  • 1 cup extra-virgin coconut oil
  • 2 ripe avocados, peeled and pitted
  • ¾ cup unrefined sugar
  • Pinch salt
  • 1 tablespoon vanilla extract
  • Avocados

PREPARATION

  1. Place the bananas and coconut oil in a food processor or blender and blend well.
  2. Add the remaining ingredients and blend well. Refrigerate for 4 hours to overnight.
  3. Add the mixture to an ice cream maker and follow the manufacturer’s instructions for freezing.
