The height of summer, when tomatoes are their ripest, is the time to make this simple sauce, called salsa crudaiola in Italy. Serve it on pasta, toasted bread, grilled eggplant or mushrooms, hard-cooked eggs—the possibilities are endless.
Uncooked Tomato Sauce, also known as “salsa cruda” or “raw tomato sauce,” is a vibrant and refreshing sauce made with fresh tomatoes and other simple ingredients. This sauce is beloved for its simplicity and ability to showcase the natural flavors of ripe tomatoes. By combining diced tomatoes with fresh basil, garlic, olive oil, and seasonings, the sauce maintains a bright and crisp taste. Unlike cooked tomato sauces, this uncooked version retains the freshness and texture of the tomatoes, providing a delightful contrast to many dishes. Uncooked Tomato Sauce is incredibly versatile and can be used as a topping for pasta, a dip for bread or chips, or a refreshing sauce for grilled meats and vegetables. Its simplicity and vibrant flavors make it a perfect choice for enjoying the essence of summer tomatoes.

- Add a 5-ounce can of imported Italian tuna and a pinch of dried oregano.
- Add ½ cup chopped mixed fresh herbs, such as mint, parsley, thyme, and rosemary.
SERVING SUGGESTIONS:
- Pasta: Toss the sauce with cooked pasta, such as spaghetti or linguine, for a light and refreshing pasta dish. Add some grated Parmesan cheese or fresh mozzarella to enhance the flavors.
- Bruschetta: Spoon the sauce over toasted baguette slices and serve as an appetizer or snack. You can also top it with some fresh basil leaves or a sprinkle of balsamic glaze for added complexity.
- Caprese Salad: Use the sauce as a base for a classic Caprese salad. Arrange alternating slices of fresh mozzarella cheese and ripe tomatoes, drizzle with the sauce, and garnish with fresh basil leaves. It’s a simple and elegant dish that highlights the flavors of the ingredients.
- Grilled Meats and Seafood: Serve the sauce as a condiment or dipping sauce for grilled meats, such as chicken or steak, and seafood like shrimp or scallops. The bright and tangy flavors of the sauce complement the smoky and charred flavors of the grilled items.
- Crostini Toppings: Spread the sauce on crostini (small toasted bread slices) and top with various ingredients like grilled vegetables, prosciutto, or goat cheese. The sauce adds a burst of freshness and acidity to the toppings.
- Dip: Serve the sauce as a dip for breadsticks, pita chips, or vegetable crudités. It makes a tasty and healthier alternative to store-bought dips.
- Burger Topping: Add a spoonful of the sauce on top of burgers or sliders for a burst of flavor. It pairs well with beef, turkey, or veggie burgers.
