INGREDIENTS
- 2 jalapeno peppers, seeded and chopped
- 3 medium green peppers, cut into 1-inch pieces, divided
- 1½ cups white vinegar, divided
- 6½ cups sugar
- ½ to 1 teaspoon cayenne pepper
- 2 pouches (3 ounces each) liquid fruit pectin
- About 6 drops green food coloring (optional)
- Cream cheese and crackers (optional)
INSTRUCTIONS
- In a blender or food processor, combine the jalapeno peppers, half of the green peppers, and ½ cup of vinegar. Blend or process until the mixture is pureed and well combined. Transfer the mixture to a large Dutch oven.
- Repeat the process with the remaining green peppers and another ½ cup of vinegar. Blend or process until pureed, and then add the mixture to the Dutch oven.
- To the Dutch oven, add the sugar, cayenne pepper, and the remaining vinegar. Stir well to combine all the ingredients. Bring the mixture to a rolling boil over high heat, stirring constantly to prevent sticking.
- Once the mixture reaches a rolling boil, quickly stir in the liquid fruit pectin. Continue stirring and return the mixture to a rolling boil. Let it boil for 1 minute, ensuring you stir constantly.
- Remove the Dutch oven from the heat and skim off any foam that may have formed on the surface. If desired, add a few drops of green food coloring to enhance the visual appeal of the jelly. Stir gently to incorporate the food coloring.
