I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

 

INGREDIENTS:

  • 1 1/3 cups blanched almond flour
  • 1/3 cup tapioca flour
  • 1/2 tsp. sea salt
  • 1 large egg
  • 1/4 cup coconut oil
  • 2 tbsp. coconut sugar or raw honey
  • 1 tsp ground vanilla bean

 

INSTRUCTIONS:

  1. In the bowl of a food processor, combine almond flour, tapioca flour, sea salt, ground vanilla bean, egg, and coconut sugar (if using coconut sugar). Pulse 2-3 times to combine the dry ingredients.
  2. Add coconut oil and raw honey (if using raw honey) to the mixture in the food processor. Pulse several times for one second each and then let the food processor run until the mixture forms a dough.
  3. Pour the dough onto a sheet of plastic wrap. Wrap the dough and press it into a 9-inch disk. Refrigerate the dough for 30 minutes.
  4. Preheat your oven to 375°F (190°C) and place the oven rack in the middle position.
  5. Remove the plastic wrap from the chilled dough. Press the dough onto the bottom and up the sides of a 9-inch buttered pie dish. Crimp the edges of the crust slightly for decoration.
  6. Chill the pie crust in the refrigerator for an additional 20 minutes.
  7. Bake the pie crust in the preheated oven until it turns golden brown.
