INGREDIENTS

  • 1 cup broccoli florets, lightly steamed or blanched
  • 1 ripe avocado, diced
  • 1 cup frozen green peas, thawed
  • 1/4 cup pumpkin seeds (pepitas), toasted
  • 1/4 cup crumbled feta cheese (optional, for added creaminess and flavor)

 

FOR THE LEMON-TAHINI DRESSING:

  • 1/4 cup tahini (sesame seed paste)
  • 1/4 cup water
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

 

INSTRUCTIONS

  1. Start by preparing the Supergreen Salad. Wash and dry the mixed greens, then arrange them in a large salad bowl as the base of the salad.
  2. Lightly steam or blanch the broccoli florets to retain their vibrant green color and tender-crisp texture. Add the broccoli to the salad bowl.
  3. Dice the ripe avocado and add it to the salad, providing a creamy and nourishing element.
  4. Thaw the frozen green peas by rinsing them under cool water. Drain any excess water before adding the peas to the salad bowl.
  5. Toast the pumpkin seeds in a dry skillet over medium heat until they become golden and fragrant. Allow them to cool before sprinkling them over the salad.
