Tangy Avocado Dip with Red Onion, Cilantro, and Lime
This crowd-pleasing guac can be made ahead of time so you don’t miss a minute of the game (or the commercials, if that’s your thing!). To keep it from turning brown before you eat it, cover the guac with plastic wrap, making sure the plastic touches the surface, until you’re ready to serve it.
Serves 4
INGREDIENTS
- 2 ripe avocados, halved and pitted
- 1 tablespoon fresh lime juice
- ¼ cup finely chopped red or Vidalia onion
- ¼ cup chopped fresh cilantro
- 1 jalapeño pepper, seeded and finely chopped (optional)
- ½ cup finely chopped tomato (optional)
- Salt
- Tortilla chips, for serving
INSTRUCTIONS
- Scoop the avocados from their shells into a serving bowl. Sprinkle them with lime juice. Using a potato masher or a fork, mash them to a coarse puree.
- Stir in the onion and cilantro, along with the jalapeño and tomato (if using); add salt to taste and additional lime juice, if desired.
- Serve with tortilla chips.
TIP:
- To judge the ripeness of an avocado, just give it a squeeze: the flesh should give a little when you press on it but not be too soft.
