INGREDIENTS:
- 1/2 cup Snow Peas, trimmed
- 2 cups Pasta, cooked
- 2 cups Fresh Vegetables, sliced (e.g., bell peppers, cucumbers, cherry tomatoes, etc.)
- 1/4 cup Parmesan Cheese, grated
- 2 tablespoons Fresh Basil, chopped
- Salt and Pepper, to taste
- 1/3 cup of your favorite Salad Dressing
INSTRUCTIONS:
- In a small saucepan, bring 3 cups of water to a boil over high heat.
- Add the snow peas to the boiling water and cook for 3-5 minutes or until they are crisp-tender.
- Drain the snow peas and rinse them under cold water until they are cool.
- In a large bowl, combine the cooked snow peas, pasta, sliced fresh vegetables, grated Parmesan cheese, and chopped fresh basil.
- Season the salad with salt and pepper according to your taste.
- Toss the salad with 1/3 cup of your favorite salad dressing, making sure all the ingredients are well coated.
- Let the salad marinate for about 30 minutes before serving to allow the flavors to blend together.

- Mediterranean Pasta Salad:
- Add diced cucumbers, cherry tomatoes, black olives, feta cheese, and red onions to the pasta.
