Strawberry Banana Chia Pudding

INGREDIENTS:

  • 1 cup Plain Coconut Milk (unsweetened, from the carton)
  • 1/4 cup Vanilla Protein Powder
  • 1/4 cup Chia Seeds
  • 1/2 cup Strawberries (chopped)
  • 1/2 Banana (sliced)

 

INSTRUCTIONS:

  1. Combine the plain coconut milk, vanilla protein powder, and chia seeds in a bowl or container. Mix well to ensure the protein powder and chia seeds are evenly distributed in the milk.
  2. Refrigerate the mixture for at least three hours or until the chia seeds have absorbed the liquid and the pudding has thickened and chilled. This allows the chia seeds to set and create a pudding-like consistency.
  3. To serve, give the chia pudding a good stir to make sure it’s well mixed. If it appears too thick, you can add more coconut milk to achieve your desired consistency.
  4. Top the chia pudding with the chopped strawberries and sliced banana. You can also drizzle some extra coconut milk on top if you prefer a creamier texture.
  5. Enjoy your chia pudding with strawberries and banana! If you like, you can also add more milk to adjust the texture to your liking.

 

NOTES:

  • Leftovers can be stored in an airtight container in the refrigerator for up to four days. However, it’s best to cut the fresh fruit just before serving to maintain its freshness and texture.
  • For more flavor, consider adding a sprinkle of ground cinnamon or your preferred liquid sweetener, like maple syrup or honey.
  • Additional toppings can be added to customize the chia pudding further. Experiment with other fresh berries or chopped fruits of your choice.
  • For an extra protein boost, you can top the chia pudding with a dollop of yogurt or LSA (a mix of ground linseeds, sunflower seeds, and almonds).
  • Keep in mind that the recipe was designed and tested using plant-based protein powder. If you choose to use a different type of protein powder, the results may vary.
