INGREDIENTS

  • 4 ounces beef flank steak
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
  • ½ teaspoon canola oil
  • 2 flour tortillas (8 inches), warmed
  • ½ cup cold cooked rice
  • ½ medium ripe avocado, peeled and diced
  • ½ cup canned black beans, rinsed and drained
  • 2 tablespoons sour cream
  • 1 tablespoon salsa
  • 1 tablespoon finely chopped onion
  • 1½ teaspoons minced fresh cilantro

 

INSTRUCTIONS

  1. Sprinkle the beef flank steak with salt and pepper. In a small skillet coated with cooking spray, cook the steak in canola oil over medium-high heat for 3-4 minutes on each side or until the meat reaches the desired doneness (medium-rare: 145°f/63°c, medium: 160°f/71°c, well-done: 170°f/77°c).
  2. Thinly slice the steak across the grain. Place the sliced steak down the center of each warmed tortilla.
  3. Top the steak with the cold cooked rice, diced avocado, black beans, sour cream, salsa, finely chopped onion, and minced fresh cilantro.
  4. Roll up the tortillas, enclosing the filling. Serve the steak burritos immediately.
