Makes about 2 cups
INGREDIENTS
- 2 Tbsp olive oil
- 6 cloves garlic, mashed
- ½ cup fresh cilantro, chopped
- 5 hot red chilies, seeded and chopped
- 8 ripe tomatoes, peeled and puréed
- 1 tsp cinnamon
- 1 Tbsp tomato paste salt and pepper
- 2 tomatoes, diced
INSTRUCTIONS
- In a saucepan heat the olive oil and sauté the garlic for 1 minute.
- Add the cilantro and stir.
- Add the chilies and tomato purée along with the cinnamon, tomato paste, salt and pepper and allow to come to the boil.
- Stir in the diced tomatoes.
- Lower the heat to simmer and leave for 10 minutes to unify the flavors.
- Serve hot.
