Spicy Tomato Salsa (Dakkous)

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Makes about 2 cups

INGREDIENTS

  • 2 Tbsp olive oil
  • 6 cloves garlic, mashed
  • ½ cup fresh cilantro, chopped
  • 5 hot red chilies, seeded and chopped
  • 8 ripe tomatoes, peeled and puréed
  • 1 tsp cinnamon
  • 1 Tbsp tomato paste salt and pepper
  • 2 tomatoes, diced

 

INSTRUCTIONS

  1. In a saucepan heat the olive oil and sauté the garlic for 1 minute.
  2. Add the cilantro and stir.
  3. Add the chilies and tomato purée along with the cinnamon, tomato paste, salt and pepper and allow to come to the boil.
  4. Stir in the diced tomatoes.
  5. Lower the heat to simmer and leave for 10 minutes to unify the flavors.
  6. Serve hot.
